Preheat oven to 325°F. Line baking sheet with foil.
Sprinkle ribs evenly with 1 1/2 tsp salt and 1 tsp dried sage. Place ribs on foil lined baking sheet and place in oven. Bake ribs for 2 hours.
Add blueberries, Blueberry Balsamic Vinegar, fresh thyme, garlic, and smoked salt to a small pot. Bring the contents of pot to a boil, and then cover and cook for 5-7 minutes or until bubbling and the berries are blistered. Remove from heat and let cool.
Blend blueberry mixture until smooth.
Once ribs are finished, brush generous amount of blueberry balsamic glaze onto the ribs and bake for an additional 20 minutes.
Remove ribs from oven, brush with remaining blueberry sauce, and serve.
